Restaurant Review – Eddie’s Mexican Restaurant

My ABSOLUTE FAVORITE Restaurant in Las Vegas (honestly, anywhere!)

Eddie’s Mexican Restaurant is a fabulous eatery located in Southwest Las Vegas on Flamingo and Grand Canyon.

A little history, Eddie’s is the reincarnation of Macayo Vegas, a restaurant my family has been eating at since the 1950’s. I’ve literally (and I hate using that word) been eating this food for over 40 years. In the old location on East Charleston, I remember being in the 2nd room to the left in the back in a booth with my mom, grandma, great grandfather, and uncles. It’s one of my earliest memories.

When Macayo’s announced they would be closing in 2019, I was heartbroken, there was outcry in Las Vegas. I went almost every weekend until they closed the doors.

So Eddie (the owner of the Sahara West Macayo location) decided to open Eddie’s with all the same food from Macayo’s. They owned all the recipes.

There were several awful months with no Macayo’s and no Eddie’s. It was torture! But finally! They opened!

October of 2019, I was welcomed back home.

They renovated an old Famous Dave’s building, and it is wonderful! They did a great job bringing back the ambiance!

Let’s get to what you came here for.. the food!

Chips & Salsa- My Favorite!

I am in LOVE with the “smooth” salsa here. I could drink it. It is so delicious, and spicy, and it’s ADDICTING. The chips are warm when they come out, not too salty, and they are the perfect device to hold LOTS of that Salsa! I could actually drink this salsa, it makes my taste buds so happy! I don’t eat the chunky.. because.. well chunks.. but my family all prefers it because they like the chunks! Either way you go, you won’t be disappointed.

A beautiful tasty TCT

We LOVE the TCT (Toasted Cheese Tortilla), I don’t know what kind of cheese they use, but it’s ooey gooey and tasty delicious! So simple, just cheese and a tortilla, but it’s truly a delicious, wonderous, food delight! The perfect start to an amazing meal!

The BEST Chicken Fingers anywhere with some Awesome Ranch too

For the majority of my life, I only got chicken fingers. I know, I know, why are you getting Chicken Finger at a MEXICAN restaurant??? Well.. let me tell you. I get the chicken fingers spicy. I tell you want.. these are THE BEST Chicken Fingers I’ve ever had anywhere. I’m a picky eater, and I’ve eaten Chicken Fingers pretty much everywhere I’ve ever dined. Hands down. Eddies’ are THE BEST. And their Ranch needs honorable mention as well! Their ranch is some of the best ranch around. This is a go to for me every time!

Cheese Enchiladas with Refried Beans

The Cheese Enchilada are my 2nd love. These are the first non chicken finger entree I ever tried and they are AMAZING. The corn tortillas are fresh and cooked perfectly, the cheese blend is delicious and gives you that little bit of “bite” that I love about these. And oh that sauce and cheese combo on top. PURE TASTY WONDERFULNESS!!!! Add a side of the refried beans (and rice if you like the spanish rice) and this plate is pure perfection!

Cheese Enchiladas a la cart

Now, I do not have pictures (right now) of my next two favorite dishes, but I will try to remember to get pics next time I go. I’m always so hungry, I forget and just dig in! I can’t wait!

Carnitas Chimichanga (dry) with a side of refried beans. This, oh this… this is a beautiful piece of art in food. The carnitas and super flavorful (my mouth is watering just thinking about them!) and very tender. I always ask for cheese inside the chimi so it’s carnitas and cheese all melty together, oh my goodness it’s delightful. I get this dry becuase while I love it enchilada style, the sauce they use for chimi’s has bits and pieces in it and I don’t love it.. but when it is enchilada style, the soaked fried tortilla with the sauce, at the end of the chimi is wonderful, so delicious. This is seriously an amazing plate to get!

Carnitas and Cheese Quesadilla – this is basically the TCT but folded over and with MORE CHEESE. Which is never a bad thing! The delicious carnitas and all that fabulous cheese, this is a great option for a little less that a regular plate with bean and rice.

When we go, my daughter and I split our plates, so she orders the Chicken Fingers and I either order the Cheese Enchiladas, the Carnitas Chimi, or the Quesadilla. We both eat half of our original plate, then we switch. It’s the PERFECT situation, the best of both worlds! I love being able to split with her now that she likes the same things I like.

My husband loves the Chili Con Queso to start, a cheese dip, made with cheese, green chiles and secret spices and it comes with a plate of fresh hot chips. He also loves the chimi but also gets it with Carne Asada, enchilada style of course. He often gets the Street Tacos (Four mini corn tortillas stuffed with your choice of carnitas, grilled chicken or carne asada. Served with cilantro and onions, with your choice of rice or refried beans.) or the Shrimp tacos (Two savory shrimp tacos served with your choice of rice, beans or fresh steamed veggies.), or the Fajitas. He tries something new almost everytime we go, but also rotates through his favorites. we go a lot!

My friend who is also a long time lover of Eddie’s (and Macayo’s) LOVEs the Bean Burrito Enchilada Style. Their beans are so smooth, creamy, and flavorful, add in the cheese, the tortilla, and that delicious Enchilada sauce, and it’s the perfect combination of loveliness.

Now, let me tell you about the workers, most of them have been with the company for over 15 years, some WAY longer. When you go, they make you feel like family, they stop to chat, and servers that aren’t your server, stop to say hi, or thank you for coming back. This place has the friendliest, family of a staff ever. It’s welcoming and warm, and wonderful!

So there you have it, an amazing place, with amazing food, and amazing staff. If you are in the Las Vegas Area and you are looking for a great meal, I highly recommend Eddie’s.
